Vinaigrette au sirop d'érable

Maple Vinaigrette Dressing

 

  • 1 tbs of Dijon mustard

  • 1 tbs balsamic vinegar 

  • 1/4 cup olive oil

  • 1/4 cup pure maple syrup*

  • 1 shallot (minced)

  • 1 tbs of minced green apple (peeled)

  • Pinch of Salt & Pepper

 

In a mixing bowl, combine the mustard, balsamic vinegar, olive oil, and pure maple syrup.

 

Finely mince the shallot.  

 

Peel and finely mince a slice of apple (about 1 tablespoon). 

 

Add the shallot and apple to the vinaigrette and mix vigorously.   Drizzle over any salad.

 

*it's important to choose pure maple syrup, not the high fructose corn syrup versions that most of us pour over pancakes.  If you don't see any in the typical syrup isle of your grocery store, try looking in the International food isle or the baking goods section.
